1 tsp vanilla extract (5 ml)

1–2 tbsp honey or maple syrup, optional (15–30 ml)

½ tsp baking powder (2.5 g)

Pinch of salt

Optional Toppings

Fresh berries

Nut butter

Greek yogurt

Extra drizzle of honey or maple syrup

Directions:

📌 Step-by-Step

Step 1 – Preheat & Prepare

Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or use silicone liners for easy removal.

Step 2 – Mix the Batter

In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth. Add almond flour, baking powder, and salt. Stir until fully combined.

Tip: Blend the batter for an extra smooth and fluffy texture.

Step 3 – Fill the Muffin Tin

Spoon the batter evenly into the mini muffin cups, filling each about ¾ full.

Step 4 – Bake Until Golden

Bake for 15–18 minutes, until the pancake bites are puffed, lightly golden, and set in the center.

Step 5 – Cool & Serve

Allow to cool for a few minutes before removing from the pan. Serve warm or chilled with your favorite toppings.

Tips for Success

Add cinnamon or lemon zest for extra flavor.
