1 cup cottage cheese (240 ml | ~220 g)
2 large eggs (≈100 ml | 110 g without shell)
¼ cup almond flour (30 g)
or oat flour for a softer, fluffier texture
1 tsp vanilla extract (5 ml)
1–2 tbsp honey or maple syrup, optional (15–30 ml)
½ tsp baking powder (2.5 g)

Step 1 – Preheat & Prepare
Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or use silicone liners for easy removal.
Step 2 – Mix the Batter
In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until mostly smooth. Add almond flour, baking powder, and salt. Stir until fully combined.

Spoon the batter evenly into the mini muffin cups, filling each about ¾ full.
