๐Ÿช High-Protein Oreo Cheesecake Bars

๐Ÿงพ Ingredients (8โ€“10 bars)

Crust

12โ€“14 Oreo cookies (or any chocolate sandwich cookies)
2 tbsp melted butter or coconut oil

Cheesecake filling

1 cup cottage cheese (blended smooth)
200 g cream cheese (low-fat works well)
1/2 cup Greek yogurt (thick, plain)
1/2 cup protein powder (vanilla or unflavored)
1/3 cup sugar, honey, or a calorie-free sweetener
2 eggs
1 tsp vanilla extract
6โ€“8 Oreo cookies (crushed)
๐Ÿ‘จโ€๐Ÿณ Instructions
Prep oven & pan
Preheat oven to 170ยฐC (340ยฐF). Line a square baking pan with parchment paper.
Make crust
Crush Oreos into fine crumbs and mix with melted butter.
Press firmly into the base of the pan.
Bake for 8โ€“10 minutes, then let it cool slightly.
Blend filling
Blend cottage cheese until smooth (this removes lumps).
In a bowl, mix cream cheese, Greek yogurt, blended cottage cheese, protein powder, and sweetener until creamy.
Add eggs & flavor
Mix in eggs and vanilla until just combined.
Fold in crushed Oreos.
Bake
Pour filling over crust and smooth the top.
Bake for 30โ€“40 minutes, until the center is set but slightly jiggly.
Cool & chill
Let it cool at room temperature, then refrigerate for at least 3โ€“4 hours (overnight is best).
Slice & serve
Cut into bars and enjoy chilled.
