Ingredients
- 2 catfish fillets
- ½ cup almond flour (or chickpea flour)
- 2 tbsp cornmeal (optional, for texture)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp cayenne (optional)
- Salt & black pepper
- 1 egg (or egg white)
- 1–2 tbsp olive oil (for brushing or light pan-fry)

Instructions
- Prep fish
Pat fillets dry and season lightly with salt and pepper. - Set up coating
- Bowl 1: whisk egg
- Bowl 2: mix almond flour, small amount of cornmeal, and spices

Dip fish in egg, then coat evenly with the flour mixture. - Cook (healthier options)
- Air fryer: 180°C (350°F) for 10–12 minutes
- Bake: 200°C (400°F) for 12–15 minutes
- Light pan-fry: minimal oil, 3–4 minutes per side
