Diabetic-Friendly “Fried” Catfish

Ingredients

  • 2 catfish fillets
  • ½ cup almond flour (or chickpea flour)
  • 2 tbsp cornmeal (optional, for texture)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cayenne (optional)
  • Salt & black pepper
  • 1 egg (or egg white)
  • 1–2 tbsp olive oil (for brushing or light pan-fry)
  • Lemon wedges (for serving)

Instructions

  1. Prep fish
    Pat fillets dry and season lightly with salt and pepper.
  2. Set up coating
    • Bowl 1: whisk egg
    • Bowl 2: mix almond flour, small amount of cornmeal, and spices
  3. Coat
    Dip fish in egg, then coat evenly with the flour mixture.
  4. Cook (healthier options)
    • Air fryer: 180°C (350°F) for 10–12 minutes
    • Bake: 200°C (400°F) for 12–15 minutes
    • Light pan-fry: minimal oil, 3–4 minutes per side
