Ingredients
The Four Onions
- 2 tbsp unsalted butter
- 2 large yellow onions thinly sliced
- 1 cup chopped leeks white + light green parts
- 4 green onions scallions, finely sliced
- 2 tbsp chives finely chopped
Creamy Base
- 1 cup sour cream
- ½ cup cream cheese softened
- ½ cup mayonnaise
Flavoring
- 2 cloves garlic minced
- ½ tsp salt adjust to taste
- ¼ tsp black pepper
- ½ tsp smoked paprika optional
Instructions
- Caramelize the onions
- Melt butter in a pan over medium-low heat.
- Add sliced yellow onions and cook slowly, stirring often, for 20–25 minutes until soft, golden, and sweet.
- Add leeks & garlic
- Stir in leeks and cook 5 minutes until tender.
- Add garlic and cook 1 minute more.
- Remove from heat and let cool slightly.
- Make the creamy base
- In a bowl, mix sour cream, cream cheese, and mayonnaise until smooth.
- Combine everything
- Fold in the cooked onion mixture.
- Add green onions and chives.
- Season with salt, pepper, and paprika.
