Ingredients

The Four Onions

  • 2 tbsp unsalted butter
  • 2 large yellow onions thinly sliced
  • 1 cup chopped leeks white + light green parts
  • 4 green onions scallions, finely sliced
  • 2 tbsp chives finely chopped

Creamy Base

  • 1 cup sour cream
  • ½ cup cream cheese softened
  • ½ cup mayonnaise

Flavoring

  • 2 cloves garlic minced
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • ½ tsp smoked paprika optional

Instructions

  • Caramelize the onions
  • Melt butter in a pan over medium-low heat.
  • Add sliced yellow onions and cook slowly, stirring often, for 20–25 minutes until soft, golden, and sweet.
  • Add leeks & garlic
  • Stir in leeks and cook 5 minutes until tender.
  • Add garlic and cook 1 minute more.
  • Remove from heat and let cool slightly.
  • Make the creamy base
  • In a bowl, mix sour cream, cream cheese, and mayonnaise until smooth.
  • Combine everything
  • Fold in the cooked onion mixture.
  • Add green onions and chives.
  • Season with salt, pepper, and paprika.
  • Chill (important step)
  • Cover and refrigerate for at least 1 hour to let flavors blend.
