Easy Diabetic Omelet Bites

🧾 Ingredients (makes ~6–8 bites)
- 4 large eggs
- 2 tbsp milk (or unsweetened almond milk)
- ¼ cup chopped spinach
- ¼ cup diced bell peppers
- 2 tbsp chopped onions
- ¼ cup mushrooms (optional)
- ¼ cup shredded cheese (cheddar or mozzarella)
- Salt & black pepper (to taste)
- Pinch of turmeric or chili flakes (optional)
👩🍳 Instructions
- Preheat oven to 180°C (350°F)
- Lightly grease a muffin tray
- In a bowl, whisk eggs + milk + seasoning
- Add all vegetables and mix well
- Pour mixture evenly into muffin cups
- Sprinkle cheese on top
- Bake for 15–20 minutes until set
- Let cool slightly and remove
