
Ingredients
- 1 box Angel Food Cake mix
- 3 large eggs (adds protein and structure)
- 1 can (20 oz) crushed pineapple, undrained
- 2 boxes pistachio pudding mix (sugar-free or low sugar if possible)
- ยฝ cup Greek yogurt (optional, for extra protein and creaminess)
Instructions
- Preheat oven
- To 175ยฐC (350ยฐF)
- Prepare a bundt or tube pan (no grease needed for angel food cake)
- Mix wet ingredients
- In a large bowl, combine crushed pineapple (with juice), eggs, and Greek yogurt (if using)
- Stir well
- Add dry ingredients
- Add the angel food cake mix and pistachio pudding mixes to the wet mixture
- Gently fold until combined, do not overmix
- Bake
- Pour batter into the pan evenly
- Bake 35โ40 minutes or until a toothpick inserted comes out clean
- Cool and serve
- Let cake cool upside down in the pan for 1 hour
- Remove carefully and slice
- Serve as is or with a dollop of Greek yogurt for extra protein
