- 1 cup cornmeal
- Β½ cup oat flour (or almond flour for extra protein)
- 1 scoop vanilla or unflavored protein powder (~30g)
- 1 tsp baking powder
- Β½ tsp salt
- 1 cup Greek yogurt (plain, high-protein)
- 2 large eggs
- ΒΌ cup milk (any kind)
- 2 tbsp butter (plus extra for skillet)
πͺ Instructions
- Preheat oven
- Set to 200Β°C (400Β°F)
- Place a 9-inch cast iron skillet in oven with 1 tbsp butter to melt
- Mix dry ingredients
- In a bowl, combine cornmeal, oat flour, protein powder, baking powder, and salt
- Mix wet ingredients
- Whisk Greek yogurt, eggs, milk, and 1 tbsp melted butter
- Combine batter
- Stir wet ingredients into dry until just combined (donβt overmix)
- Bake in cast iron
- Carefully remove hot skillet from oven
- Pour batter into skillet
- Bake 20β25 minutes until golden brown and a toothpick comes out clean
- Serve
- Let cool slightly
- Slice and serve with savory dishes or a drizzle of honey
