- 1 cup unsweetened shredded coconut
- 1 cup Greek yogurt (plain, thick)
- 3 large eggs
- 1 scoop vanilla protein powder
- ½ cup unsweetened almond milk or regular milk
- 2–3 tbsp honey or maple syrup (optional, adjust sweetness)
- 1 tsp vanilla extract
- ½ tsp coconut extract (optional, enhances coconut flavor)
- Pinch of salt
👩🍳 Instructions
- Preheat oven
To 175°C (350°F). Grease a 9-inch pie dish lightly. - Mix wet ingredients
In a large bowl, whisk eggs, Greek yogurt, milk, honey, vanilla, and coconut extract until smooth. - Add dry ingredients
Fold in shredded coconut, protein powder, and salt until well combined. - Pour and bake
Pour mixture into the prepared pie dish. Bake 35–40 minutes until set and lightly golden on top.
Tip: The center should be slightly wobbly—it firms as it cools. - Cool & chill
Let the pie cool at room temperature, then refrigerate at least 2 hours before serving. - Serve
Optional toppings: unsweetened whipped cream, toasted coconut, or berries.
