- 3 medium potatoes, peeled and grated or mashed
- 1 cup cottage cheese or Greek yogurt (for protein and creaminess)
- 2β3 large eggs
- 1 cup shredded cheddar or mozzarella cheese
- ΒΌ cup almond flour or oat flour (optional, helps bind)
- 2 cloves garlic, minced
- 1 tsp onion powder
- Β½ tsp black pepper
- Β½ tsp salt (or to taste)
- Optional: chopped herbs (parsley, chives)

- Preheat oven
- Set to 180Β°C (350Β°F). Grease a loaf pan or line with parchment paper.
- Prepare potatoes
- Grate or mash the potatoes. If grated, squeeze out excess moisture using a clean towel.
- Mix ingredients
- In a large bowl, combine potatoes, cottage cheese/Greek yogurt, eggs, cheese, almond flour (if using), garlic, onion powder, salt, pepper, and herbs.
- Mix until evenly combined.
- Bake
- Pour mixture into the prepared loaf pan and smooth the top.
- Bake 35β45 minutes until golden on top and set in the center.
- Optional: broil for 2β3 minutes for extra golden crust.
- Cool & slice
- Let the loaf cool 5β10 minutes before slicing.
- Serve warm as a high-protein side, breakfast, or snack.
