- 2 large chicken breasts
- 2β3 slices lean ham or turkey ham
- 2 slices Swiss or mozzarella cheese (or ΒΌ cup shredded cheese per breast)
- 1β2 tbsp almond flour or crushed pork rinds (low-carb coating)
- 1 egg, beaten
- 1 tbsp olive oil or butter
- Salt & black pepper to taste
- Optional: 1 tsp paprika or garlic powder for extra flavor
π₯ Instructions
- Prep the chicken
- Slice chicken breasts horizontally (butterfly) so they can open like a book.
- Pound lightly to even thickness (~Β½ inch).
- Assemble
- Place a slice of ham and a slice of cheese inside each breast.
- Fold or roll the chicken around the filling.
- Secure with toothpicks if needed.
- Coat
- Dip rolled chicken in beaten egg.
- Roll in almond flour or crushed pork rinds to coat lightly.
- Cook
- Heat olive oil or butter in a pan over medium heat.
- Sear chicken on all sides for 3β4 minutes until golden brown.
- Reduce heat to medium-low, cover, and cook another 8β10 minutes until chicken is fully cooked (internal temp 75Β°C / 165Β°F).
- Serve
- Remove toothpicks. Slice to show the melty cheese.
- Serve with sautΓ©ed veggies, salad, or cauliflower mash for a low-carb meal.
