Diabetic-Friendly “Honey” Cranberry Chicken

🥣 Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries (unsweetened)
  • 1–2 tbsp sugar-free honey substitute or 1 tsp real honey (optional, small amount)
  • 2 tbsp orange juice (fresh, no added sugar — optional, keep minimal)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • ½ tsp cinnamon
  • Salt & black pepper to taste
  • ½ cup water or low-sodium chicken broth

👩‍🍳 Instructions

  1. Sear chicken:
    Heat olive oil in a pan, season chicken with salt & pepper, and cook until lightly browned.
  2. Make sauce:
    Add garlic, cranberries, orange juice, cinnamon, and broth. Let it simmer.
  3. Sweeten lightly:
    Add a small amount of honey substitute (or a tiny bit of real honey).
  4. Simmer:
    Cover and cook for 10–15 minutes until chicken is done and sauce thickens.
  5. Serve:
    Spoon cranberry sauce over the chicken.
