Diabetic-Friendly Garlic Parmesan Chicken Mini Meatloaves

These mini meatloaves are high in protein, low in carbs, and full of garlic-parmesan flavor. Baking them as mini loaves helps with portion control, which is helpful for blood sugar management.


🧾 Ingredients (4 servings)

  • 500 g ground chicken
  • ¼ cup grated Parmesan cheese
  • ¼ cup almond flour (instead of breadcrumbs)
  • 1 egg
  • 3 cloves garlic, minced
  • 2 tbsp finely chopped onion
  • 1 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1 tbsp olive oil

Optional topping

  • 2 tbsp shredded mozzarella
  • Extra Parmesan for sprinkling

👩‍🍳 Instructions

1️⃣ Preheat oven
Preheat oven to 180°C (350°F) and lightly grease a muffin tin or small baking dish.

2️⃣ Mix ingredients
In a bowl combine:

  • ground chicken
  • Parmesan
  • almond flour
  • egg
  • garlic
  • onion
  • parsley
  • Italian seasoning
  • pepper and salt

Mix until well combined.

3️⃣ Shape mini loaves
Divide mixture into 6–8 portions and place into muffin cups or shape small loaves.

4️⃣ Bake
Bake for 20–25 minutes until the chicken is cooked through.

5️⃣ Add topping (optional)
Sprinkle mozzarella or extra Parmesan on top during the last 5 minutes of baking.

6️⃣ Serve
Let them rest for a few minutes before serving.
