These pancakes are low in refined carbs, high in fiber, and gently sweet—better for blood sugar control while still tasting light and fluffy.


🧾 Ingredients

Dry ingredients

  • ½ cup almond flour
  • ¼ cup oat flour (or finely ground oats)
  • 1 tsp baking powder
  • ¼ tsp cinnamon (optional but helps flavor)
  • Pinch of salt

Wet ingredients

  • 2 eggs
  • ¼ cup unsweetened almond milk (or low-fat milk)
  • 2 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1 tsp vanilla extract
  • 1–2 tsp erythritol, monk fruit, or stevia (optional)

For cooking

  • 1 tsp olive oil or butter for the pan

1️⃣ Mix dry ingredients
In a bowl combine almond flour, oat flour, baking powder, cinnamon, and salt.

2️⃣ Mix wet ingredients
In another bowl whisk eggs, almond milk, orange juice, orange zest, vanilla, and sweetener.

3️⃣ Combine batter
Pour the wet mixture into the dry ingredients and stir until smooth.

4️⃣ Rest the batter
Let it sit for 3–5 minutes so the oat flour absorbs moisture.

5️⃣ Cook pancakes

  • Heat a non-stick pan over medium-low heat.
  • Lightly grease with oil.
  • Pour small pancakes (about 3 tbsp batter each).
  • Cook 2–3 minutes per side until golden.
