Diabetic-Friendly Old-Fashioned Blackberry Cobbler
Ingredients
Filling
- 2 cups fresh blackberries
- 2–3 tbsp erythritol or monk fruit sweetener
- 1 tbsp chia seeds (helps thicken and adds fiber)
- 1 tsp lemon juice
- ½ tsp vanilla extract
Cobbler Topping
- ¾ cup almond flour
- ¼ cup whole-wheat flour (optional, or more almond flour)
- 1½ tbsp monk fruit or erythritol sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 1 egg
- 3 tbsp unsalted butter, melted
- 2 tbsp unsweetened almond milk
Instructions
- Preheat oven
- Set oven to 180°C (350°F).
- Prepare filling
- In a bowl, mix blackberries, sweetener, chia seeds, lemon juice, and vanilla.
- Pour into a small baking dish.
- Make topping
- Mix almond flour, whole-wheat flour, baking powder, salt, and sweetener.
- Add egg, melted butter, and almond milk.
- Stir until a soft dough forms.
- Assemble
- Drop spoonfuls of the topping over the blackberry mixture.
- Bake
- Bake 25–30 minutes until the topping is golden and berries are bubbling.
- Cool slightly and serve
- Best served warm.
