Old-Fashioned Blackberry Cobbler

Diabetic-Friendly Old-Fashioned Blackberry Cobbler

Ingredients

Filling

  • 2 cups fresh blackberries
  • 2–3 tbsp erythritol or monk fruit sweetener
  • 1 tbsp chia seeds (helps thicken and adds fiber)
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

Cobbler Topping

  • ¾ cup almond flour
  • ¼ cup whole-wheat flour (optional, or more almond flour)
  • 1½ tbsp monk fruit or erythritol sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 3 tbsp unsalted butter, melted
  • 2 tbsp unsweetened almond milk

Instructions

  1. Preheat oven
    • Set oven to 180°C (350°F).
  2. Prepare filling
    • In a bowl, mix blackberries, sweetener, chia seeds, lemon juice, and vanilla.
    • Pour into a small baking dish.
  3. Make topping
    • Mix almond flour, whole-wheat flour, baking powder, salt, and sweetener.
    • Add egg, melted butter, and almond milk.
    • Stir until a soft dough forms.
  4. Assemble
    • Drop spoonfuls of the topping over the blackberry mixture.
  5. Bake
    • Bake 25–30 minutes until the topping is golden and berries are bubbling.
  6. Cool slightly and serve
    • Best served warm.
