Soft & Buttery Diabetic-Friendly Dinner Rolls
Ingredients (Makes 8 rolls)
Dry Ingredients
- 1½ cups almond flour
- ¼ cup coconut flour
- 2 tsp baking powder
- ½ tsp salt
Wet Ingredients
- 3 large eggs
- ¼ cup plain Greek yogurt (unsweetened)
- ¼ cup melted butter
- ¼ cup warm unsweetened almond milk
- 1 tsp apple cider vinegar
Optional
- 1 tbsp psyllium husk powder (helps make rolls softer and bread-like)
Instructions
- Preheat oven to 180°C (350°F).
- Line a baking tray with parchment paper.
- In a bowl mix almond flour, coconut flour, baking powder, salt, and psyllium husk.
- In another bowl whisk eggs, yogurt, butter, almond milk, and vinegar.
- Combine wet and dry ingredients to form a soft dough.
- Let dough rest 5 minutes (this helps thicken the mixture).
- Divide dough into 8 balls and place on the tray.
- Brush tops with a little melted butter.
- Bake 18–22 minutes until golden.
