Ingredients (Makes 8 rolls)

Dry Ingredients

  • 1½ cups almond flour
  • ¼ cup coconut flour
  • 2 tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 3 large eggs
  • ¼ cup plain Greek yogurt (unsweetened)
  • ¼ cup melted butter
  • ¼ cup warm unsweetened almond milk
  • 1 tsp apple cider vinegar

Optional

  • 1 tbsp psyllium husk powder (helps make rolls softer and bread-like)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Line a baking tray with parchment paper.
  3. In a bowl mix almond flour, coconut flour, baking powder, salt, and psyllium husk.
  4. In another bowl whisk eggs, yogurt, butter, almond milk, and vinegar.
  5. Combine wet and dry ingredients to form a soft dough.
  6. Let dough rest 5 minutes (this helps thicken the mixture).
  7. Divide dough into 8 balls and place on the tray.
  8. Brush tops with a little melted butter.
  9. Bake 18–22 minutes until golden.

Brush hot rolls with:

  • Melted butter
  • Pinch of garlic powder
  • Optional parsley
