Orange Cranberry Banana Bread — Diabetic-Friendly Recipe


🧾 Ingredients

  • 1 cup almond flour
  • ½ cup oat flour (or whole-wheat flour)
  • 2 small ripe Banana, mashed
  • ½ cup unsweetened dried Cranberry (or fresh)
  • Zest of 1 Orange
  • 2 tbsp fresh orange juice
  • 2 eggs
  • ¼ cup monk fruit or erythritol sweetener
  • 3 tbsp olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Optional: 2 tbsp chopped walnuts

🍳 Instructions

  1. Preheat oven to 175°C / 350°F and line a loaf pan with parchment paper.
  2. Mix wet ingredients
    In a bowl combine mashed bananas, eggs, orange juice, orange zest, sweetener, oil, and vanilla.
  3. Mix dry ingredients
    In another bowl combine almond flour, oat flour, baking powder, baking soda, and salt.
  4. Combine batter
    Gradually add dry ingredients into the wet mixture. Fold in cranberries and walnuts.
  5. Bake
    Pour into the loaf pan and bake 40–45 minutes until a toothpick comes out clean.
  6. Cool before slicing
    Let the bread cool for 10–15 minutes.
