Broccoli and Cauliflower Soup (Diabetic-Friendly)
🥦 Ingredients
- 1½ cups chopped broccoli
- 1½ cups chopped cauliflower
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 3 cups low-sodium vegetable broth or chicken broth
- ½ cup unsweetened almond milk or light cream
- ¼ tsp black pepper
- ½ tsp salt (optional)
- Optional topping: grated Cheddar Cheese or parsley
🍳 Instructions
- Sauté the aromatics
Heat olive oil in a pot over medium heat. Add onion and cook for about 3–4 minutes until soft. Add garlic and cook for another 30 seconds. - Add vegetables
Stir in broccoli and cauliflower. - Pour broth
Add vegetable broth and bring to a boil. - Simmer
Reduce heat and simmer for 12–15 minutes until vegetables are tender. - Blend
Use a blender or immersion blender to puree the soup until smooth. - Add creaminess
Stir in almond milk and season with salt and pepper. - Serve
Top with a little cheddar cheese or herbs if desired.
