Broccoli and Cauliflower Soup (Diabetic-Friendly)


🥦 Ingredients

  • 1½ cups chopped broccoli
  • 1½ cups chopped cauliflower
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 cups low-sodium vegetable broth or chicken broth
  • ½ cup unsweetened almond milk or light cream
  • ¼ tsp black pepper
  • ½ tsp salt (optional)
  • Optional topping: grated Cheddar Cheese or parsley

🍳 Instructions

  1. Sauté the aromatics
    Heat olive oil in a pot over medium heat. Add onion and cook for about 3–4 minutes until soft. Add garlic and cook for another 30 seconds.
  2. Add vegetables
    Stir in broccoli and cauliflower.
  3. Pour broth
    Add vegetable broth and bring to a boil.
  4. Simmer
    Reduce heat and simmer for 12–15 minutes until vegetables are tender.
  5. Blend
    Use a blender or immersion blender to puree the soup until smooth.
  6. Add creaminess
    Stir in almond milk and season with salt and pepper.
  7. Serve
    Top with a little cheddar cheese or herbs if desired.
