Country Ranch Green Beans and Potatoes with BaconIngredients
- 4 cups fresh Green Beans, trimmed
- 2 cups diced Potato (red or Yukon gold work well)
- 4 slices Bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet Ranch Dressing Mix
- 1 cup chicken broth
- ½ tsp black pepper
- Optional: chopped parsley for garnish
🍳 Instructions
- Cook the bacon
In a large skillet or pot over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon fat in the pan. - Sauté aromatics
Add the onion and cook for about 3 minutes until soft. Stir in the garlic and cook another 30 seconds. - Add vegetables
Add green beans and diced potatoes to the pot. - Season
Sprinkle the ranch seasoning over the vegetables and mix well. - Simmer
Pour in the chicken broth. Cover and cook on medium-low for 15–20 minutes, until the potatoes are tender. - Finish
Stir the cooked bacon back in and simmer 2 more minutes. - Serve
Garnish with parsley and serve warm.
