Ingredients

  • 1 cup almond flour
  • 2 tbsp unsweetened cocoa powder
  • ¼ cup granulated erythritol or stevia blend
  • 1 egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • Optional: sugar-free dark chocolate chips

Instructions

  1. Preheat oven
    Set oven to 180°C (350°F).
  2. Mix dry ingredients
    Combine almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. Add wet ingredients
    Mix in egg, melted butter, and vanilla until a dough forms.
  4. Shape cookies
    Scoop small balls and flatten slightly on a baking tray lined with parchment paper.
  5. Bake
    Bake for 10–12 minutes until slightly cracked on top.
  6. Cool
    Let them cool for 5–10 minutes so they firm up.
