Diabetic-Friendly Chocolate Cookies
Ingredients
- 1 cup almond flour
- 2 tbsp unsweetened cocoa powder
- ¼ cup granulated erythritol or stevia blend
- 1 egg
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- ½ tsp baking powder
- Pinch of salt
- Optional: sugar-free dark chocolate chips
Instructions
- Preheat oven
Set oven to 180°C (350°F). - Mix dry ingredients
Combine almond flour, cocoa powder, sweetener, baking powder, and salt. - Add wet ingredients
Mix in egg, melted butter, and vanilla until a dough forms. - Shape cookies
Scoop small balls and flatten slightly on a baking tray lined with parchment paper. - Bake
Bake for 10–12 minutes until slightly cracked on top. - Cool
Let them cool for 5–10 minutes so they firm up.
