
Ingredients (Serves 6–8)
For the Filling
- 3 medium apples (peeled, cored, and thinly sliced)
- 1 tbsp lemon juice
- 2 tbsp maple syrup or honey
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 scoop vanilla protein powder (optional for extra protein)
- 2 tbsp rolled oats (or almond flour)
- 2 tbsp Greek yogurt
For the Dough (Protein-Boosted Puff)
- 1 sheet phyllo dough or puff pastry (thawed if frozen)
- 2 tbsp unsalted butter, melted (or coconut oil)
- 1 tsp vanilla extract
- 1 egg, beaten (for egg wash)
Optional Topping
- Powdered erythritol or sugar for dusting
- 1–2 tbsp chopped nuts (walnuts or almonds)
Instructions
- Prepare filling:
- In a bowl, combine sliced apples, lemon juice, maple syrup, cinnamon, nutmeg, protein powder, oats, and Greek yogurt. Set aside.
- Prepare dough:
- Lay out phyllo sheets or puff pastry. If using phyllo, brush each sheet lightly with melted butter and layer 2–3 sheets for strength.
- Assemble strudel:
- Spoon the apple filling along one long edge of the dough, leaving a 1-inch border.
- Fold the sides over the filling and carefully roll the dough into a log shape.
- Egg wash:
- Place the strudel on a parchment-lined baking sheet, seam side down. Brush the top with beaten egg.
- Bake:
- Preheat oven to 375°F (190°C). Bake 25–30 minutes, or until golden brown and flaky.
- Serve:
- Let cool slightly, then dust with powdered sugar/erythritol and sprinkle nuts if desired. Slice and serve warm.
