High-Protein Caramel Pretzel Clusters with Pecans

Ingredients

  • 3 cups mini pretzels
  • 1 cup chopped pecans
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • ½ cup natural peanut butter (adds protein and richness)
  • 1 cup light caramel sauce (store-bought or homemade, see below)
  • 2 tbsp honey or maple syrup (optional, for extra sweetness)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Homemade Light Caramel Sauce (optional)

  • ½ cup brown sugar
  • 3 tbsp butter
  • 3 tbsp milk (any kind)
  • 1 tsp vanilla extract

How to make:

  1. In a saucepan, melt butter over medium heat.
  2. Stir in brown sugar and milk; bring to a gentle boil and cook 2–3 minutes until thickened.
  3. Remove from heat, stir in vanilla extract.

Instructions

  1. In a large mixing bowl, combine pretzels and chopped pecans.
  2. In a microwave-safe bowl, heat peanut butter and caramel sauce together for about 30 seconds until warm and easily mixable.
  3. Stir in protein powder, honey (if using), vanilla extract, and a pinch of sea salt until smooth and fully combined. The mixture will be thick but pourable.
  4. Pour the caramel-protein mixture over the pretzels and pecans. Gently toss with a spatula or spoon until everything is well coated.
  5. Spread the coated mixture onto a parchment-lined baking sheet in an even layer.
  6. Let it cool at room temperature or in the fridge until firm (about 30–45 minutes).
  7. Once set, break into clusters and serve.
