Ingredients (12–14 cookies)
- 1 package (10 oz) frozen spinach, thawed and squeezed very dry
- ¾ cup crumbled feta cheese
- ¾ cup cottage cheese (blended smooth for creaminess)
- 2 large eggs
- ½ cup oat flour (or blended oats)
- ¼ cup grated parmesan cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried dill (classic spanakopita flavor)
- ½ tsp black pepper
- ½ tsp baking powder
- 1 tbsp olive oil
Optional for extra protein:
- 2 tbsp unflavored protein powder or extra parmesan
Instructions
- Preheat oven
- Set oven to 375°F / 190°C.
- Line a baking tray with parchment paper.
- Prepare the spinach
- Thaw spinach completely.
- Squeeze out as much liquid as possible using a towel or cheesecloth.
- Mix the batter
In a bowl combine:- spinach
- feta
- cottage cheese
- eggs
- oat flour
- parmesan
- garlic powder, onion powder, dill, pepper
- baking powder
- olive oil
- Shape the cookies
- Scoop about 1½ tablespoons of mixture per cookie.
- Place on the baking tray and gently flatten.
- Bake
- Bake 18–22 minutes until golden and firm.
- Cool slightly
- Let cool for 5 minutes before serving.
