Ingredients (8β10 sticks)
Chicken Layer
- 1 cup cooked shredded chicken breast
- 2 tbsp buffalo sauce
- 1 tbsp Greek yogurt (adds protein & creaminess)
- Β½ tsp garlic powder
- Β½ tsp onion powder
- Salt & black pepper to taste
Cheese Center
- 6β8 mozzarella sticks (cut in half)
Coating
- Β½ cup panko breadcrumbs (or crushed cornflakes for extra crunch)
- ΒΌ cup grated parmesan cheese
- 1 egg
- 2 tbsp all-purpose flour or protein powder
- Β½ tsp paprika
Optional Dip
- Ranch dressing
- Greek yogurt + ranch seasoning (higher protein option)
Instructions
1. Prepare the chicken mixture
In a bowl mix:
- shredded chicken
- buffalo sauce
- Greek yogurt
- garlic powder
- onion powder
- salt and pepper
Stir until the chicken is fully coated.
2. Form the sticks
- Take a small amount of buffalo chicken mixture.
- Wrap it around half a mozzarella stick.
- Press tightly so the cheese is completely covered.
- Repeat until all sticks are formed.
3. Coat the sticks
Prepare 3 bowls:
1οΈβ£ Flour bowl
2οΈβ£ Egg bowl (beaten egg)
3οΈβ£ Breadcrumb bowl (panko + parmesan + paprika)
Coating process:
- Roll stick in flour
- Dip in egg
- Coat in breadcrumb mixture
For extra crispiness, repeat egg + breadcrumbs again.
4. Chill
Place coated sticks in the freezer for 20β30 minutes.
This prevents the cheese from leaking when cooking.
5. Cook
Air Fryer (best option)
- 200Β°C / 400Β°F
- Cook 8β10 minutes until golden
Oven
- 220Β°C / 425Β°F
- Bake 12β15 minutes
Pan Fry
- Fry in shallow oil 2β3 minutes per side
