Diabetic-Friendly Fried Chicken Livers

Ingredients (4 servings)

  • 1 lb chicken livers, cleaned and trimmed
  • 2 large eggs
  • ½ cup almond flour (or crushed pork rinds for extra crunch)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 2–3 tbsp olive oil or avocado oil (for frying)
  • Optional: fresh parsley for garnish

Instructions

  1. Rinse chicken livers and pat dry with paper towels.
  2. In a bowl, whisk eggs.
  3. In another bowl, mix almond flour, paprika, garlic powder, onion powder, salt, and pepper.
  4. Dip each liver first in egg, then coat in almond flour mixture.
  5. Heat oil in a skillet over medium heat.
  6. Fry livers 3–4 minutes per side until golden and cooked through (internal temp ~165°F/74°C).
  7. Drain on paper towels and serve warm. Garnish with parsley if desired.
