Diabetic Honey Lime Chicken & Avocado Cauliflower Rice Stack
✅ Ingredients
Chicken Marinade
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp lime juice (fresh)
- 1 tsp honey (just for flavor)
- 1–2 tsp monk fruit or erythritol (to replace extra honey sweetness)
- 1 tsp lime zest
- 1 clove garlic (minced)
- ½ tsp paprika
- Salt & pepper
“Rice” Layer
- 2 cups cauliflower rice
- 1 tbsp olive oil
- Pinch salt
- 1 tbsp chopped cilantro
- Squeeze of lime
Avocado Layer
- 1 ripe avocado (diced)
- 1 tbsp lime juice
- Pinch salt
- Optional: diced tomato or red onion (small amount)
👩🍳 Instructions
- Marinate Chicken
Mix marinade ingredients and coat chicken. Marinate 20–60 minutes.
- Cook Chicken
Grill or pan-cook 5–6 minutes per side until fully cooked.
Rest 5 minutes, then slice.
- Cook Cauliflower Rice
Sauté in olive oil 5–7 minutes until tender but not mushy.
Add lime juice and cilantro.
- Prepare Avocado Mix
Toss avocado with lime and salt.
- Assemble the Stack
Use a small bowl or ring mold:- Bottom: cauliflower rice
- Middle: sliced chicken
- Top: avocado
Press gently and flip onto plate.
