🛒 Ingredients (1 small loaf)

  • 1½ cups almond flour
    (or 1 cup whole-wheat flour if almond flour isn’t available)
  • 3 large eggs
  • ½ cup unsweetened Greek yogurt
  • ⅓ cup erythritol or monk-fruit sweetener (powdered)
  • ¼ cup olive oil or melted butter
  • 1 tsp vanilla essence
  • 1½ tsp baking powder
  • ¼ tsp salt
  • (Optional) Zest of ½ lemon or orange

👩‍🍳 Instructions

  1. Preheat oven to 170°C (340°F).
  2. Line a loaf pan with parchment paper.
  3. In a bowl, whisk eggs and sweetener until light.
  4. Add yogurt, oil/butter, and vanilla. Mix well.
  5. In another bowl, mix flour, baking powder, and salt.
  6. Slowly fold dry ingredients into wet mixture.
  7. Pour batter into loaf pan.
  8. Bake for 35–40 minutes, until a toothpick comes out clean.
  9. Cool completely before slicing.
