Diabetic-Friendly Baked Cauliflower
β Ingredients
- 1 medium head cauliflower (cut into florets)
- 2 tbsp olive oil
- Β½ tsp garlic powder
- Β½ tsp paprika
- Β½ tsp turmeric (optional, anti-inflammatory)
- Salt & black pepper to taste
- 2 tbsp grated Parmesan (optional)
- Fresh parsley or lemon juice (optional, for finishing)

- Preheat oven to 400Β°F (200Β°C).
- Wash and thoroughly dry cauliflower.
- Toss florets with olive oil and all seasonings.
- Spread in a single layer on a lined baking tray.
- Bake for 25β30 minutes, flipping halfway, until golden and slightly crispy.
- Sprinkle Parmesan in the last 5 minutes if using.
- Finish with parsley or a squeeze of lemon.
π₯ Extra Crispy Option
Add 1β2 tbsp almond flour before baking for a light crust.
π§ Cheesy Version (Still Diabetic-Friendly)
In the last 5 minutes, top with a small amount of shredded mozzarella or cheddar and return to oven until melted.
