Diabetic-Friendly Low-Carb Crepes

Ingredients
- 4 large eggs
- Β½ cup almond flour
- 2 tbsp coconut flour
- ΒΎ cup unsweetened almond milk (or low-fat milk)
- 1 tbsp olive oil or melted butter
- Β½ tsp baking powder
- 1 tsp vanilla extract (optional)
- Pinch of salt
- 1β2 tsp erythritol or stevia (optional, for slight sweetness)

- In a bowl, whisk eggs until smooth.
- Add almond flour, coconut flour, baking powder, and salt. Mix well.
- Pour in milk, oil, and vanilla. Whisk until thin batter forms. Let rest 5 minutes (it thickens slightly).
- Heat a non-stick pan over medium-low heat and lightly grease.
- Pour about ΒΌ cup batter, swirl thin.
- Cook 1β2 minutes until edges lift, flip, cook another 30β60 seconds.
- Repeat with remaining batter.
