A traditional British dessert made easy in the air fryer. Sticky, golden syrup-soaked sponge that’s light yet indulgent. Perfect with cream or custard.
🧾 Ingredients (Serves 2–3)
For the Sponge
- ½ cup (115g) unsalted butter, softened
- ½ cup (100g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (65g) self-raising flour
- ¼ tsp salt
- 2 tbsp milk
For the Golden Syrup Sauce
- 3 tbsp golden syrup (or light corn syrup as a substitute)
- 1 tbsp butter
Optional: a pinch of cinnamon or nutmeg for extra flavor
🔥 Instructions
1. Prep ramekins
- Lightly grease 2–3 small heatproof ramekins or pudding molds.
- Drizzle 1 tsp golden syrup into the bottom of each ramekin.
2. Make the sponge batter
- In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Gently fold in flour and salt, then stir in milk until smooth.
3. Fill ramekins
- Spoon batter over the golden syrup in each ramekin, filling about ¾ full.
- Smooth the top lightly with a spatula.
4. Preheat air fryer
- Set air fryer to 320°F (160°C) for 3–5 minutes.
5. Cook the sponge
- Place ramekins in the air fryer basket.
- Cook 15–20 minutes, or until sponge has risen and a skewer inserted in the center comes out clean.
- Check at 15 minutes — cooking time may vary depending on air fryer size.
6. Serve
- Let puddings cool slightly for 5 minutes.
- Invert onto plates or serve straight from ramekins.
- Drizzle extra golden syrup on top and serve with cream or custard.

- Use room-temperature ingredients for a light, even sponge.
- Don’t overfill ramekins — sponge rises during cooking.
- Golden syrup at the bottom creates a sticky “treacle” sauce when inverted.
