Recipe:
4–5 medium potatoes (boiled & mashed)
1 cup grated cheese
2 eggs
1 small onion (optional, finely chopped & fried)
Salt, pepper, mixed herbs
Sliced tomatoes for topping
Method:
Mix mashed potatoes, cheese, eggs, onions, salt, pepper & herbs into a smooth mixture.
Pour into a greased dish and top with sliced tomatoes and a little extra cheese.
Bake at 190°C for 25–30 minutes, until golden and bubbling on top.
