🍪 High-Protein Brownie Mix Cookies
Ingredients

1 box (18 oz) brownie mix

¼ cup all-purpose flour

2 large eggs

¼ cup vegetable oil (or use 2 tbsp oil + 2 tbsp Greek yogurt for more protein)

1 scoop chocolate or vanilla protein powder (whey works best; plant-based works too)

1 cup chocolate chips (optional — or use high-protein chips)

Optional boosts:

2 tbsp Greek yogurt

2 tbsp milk if dough gets too thick

A pinch of salt for richer flavor

🍫 Instructions

  1. Prep

Preheat oven to 350°F (175°C).

Line a baking sheet with parchment paper.

  1. Mix Dry Ingredients

In a bowl, combine:

Brownie mix

Flour

Protein powder
Mix until fully combined.

  1. Add Wet Ingredients

Add:

Eggs

Oil (or oil + Greek yogurt)

Mix until a thick cookie dough forms.

If too thick or crumbly, add 1–2 tbsp milk to bring it together.

  1. Add Chocolate Chips

Fold in chocolate chips or high-protein chocolate pieces.

  1. Shape Cookies

Scoop dough into balls (1–2 tbsp each).

Place on baking sheet and gently flatten—brownie cookie dough doesn’t spread much.

  1. Bake

Bake 9–12 minutes for soft cookies.

Bake 12–14 minutes for firmer cookies.

Let cool 5 minutes before moving them—they set as they cool.

💪 HIGH-PROTEIN TIPS

2–3 tbsp Greek yogurt keeps cookies soft

Replace some chocolate chips with protein chips

Add 2 tbsp powdered peanut butter (PB2) for extra flavor + protein

Use Fairlife milk for any liquid adjustments

✔ Nutrition Estimate (per cookie, 14 cookies)

Approx. 8–12g protein each, depending on protein powder used.
