🥣 Meaty Cabbage Soup
Ingredients
- 1 lb ground beef
- ½ head green cabbage, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14–15 oz)
- 4 cups beef broth
- Salt & pepper, to taste
- Optional: 1–2 tsp paprika, 1 bay leaf, or a pinch of chili flakes for heat
🍳 Instructions
1. Brown the Beef
- Heat a large pot over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Drain excess fat if needed.
2. Add Aromatics
- Add the diced onion and minced garlic to the pot.
- Cook 2–3 minutes until fragrant and softened.
3. Add Cabbage
- Stir in the chopped cabbage.
- Sauté for about 5 minutes until it starts to soften.
4. Add Tomatoes & Broth
- Pour in the canned diced tomatoes (with juice).
- Add the beef broth.
- Season with salt, pepper, and any optional spices you like.
5. Simmer
- Bring to a boil, then reduce heat to low.
- Cover and simmer 25–30 minutes, or until cabbage is tender and flavors meld together.
6. Taste & Serve
- Adjust seasoning as needed.
- Serve hot. Great with bread, rice, or on its own!
