Chocolate Chip Cookie Dough Brownie Bites are heavenly treats that combine rich brownie layers with safe-to-eat cookie dough and a delicious chocolate coating.

Ingredients

  • For the Brownie Layer
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • For the Edible Cookie Dough
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 1/4 cups heat-treated all-purpose flour
  • 1/2 cup mini chocolate chips
  • For the Chocolate Coating
  • 1 1/2 cups chocolate chips (milk or semi-sweet)
  • 1 tbsp coconut oil or vegetable shortening
  • Extra mini chocolate chips for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a mini muffin pan with parchment circles or grease well.
  3. In a bowl, mix melted butter and sugar. Add eggs and vanilla.
  4. Stir in cocoa powder, flour, salt, and baking powder.
  5. Spoon a tablespoon of batter into each muffin cavity.
  6. Bake 12–15 minutes, until set.
  7. Let cool completely, then pop out of the pan.
  8. Heat-treat flour: microwave in 20-second intervals until it reaches 165°F (for safety).
  9. Beat softened butter, brown sugar, and granulated sugar.
  10. Mix in milk and vanilla.
  11. Add the cooled heat-treated flour.
  12. Fold in mini chocolate chips.
  13. Roll small scoops of dough and place them on top of each brownie bite. Press lightly to adhere.
  14. Melt chocolate chips with coconut oil until smooth.
  15. Spoon or dip the tops of each cookie dough bite into the melted chocolate.
  16. Immediately sprinkle with extra mini chocolate chips.
  17. Chill for 10–15 minutes to set.
