Chocolate Chip Cookie Dough Brownie Bites are heavenly treats that combine rich brownie layers with safe-to-eat cookie dough and a delicious chocolate coating.
Ingredients
- For the Brownie Layer
- 1/2 cup butter, melted
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- For the Edible Cookie Dough
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 1/4 cups heat-treated all-purpose flour
- 1/2 cup mini chocolate chips
- For the Chocolate Coating
- 1 1/2 cups chocolate chips (milk or semi-sweet)
- 1 tbsp coconut oil or vegetable shortening
- Extra mini chocolate chips for topping
Instructions
- Preheat oven to 350°F (175°C).
- Line a mini muffin pan with parchment circles or grease well.
- In a bowl, mix melted butter and sugar. Add eggs and vanilla.
- Stir in cocoa powder, flour, salt, and baking powder.
- Spoon a tablespoon of batter into each muffin cavity.
- Bake 12–15 minutes, until set.
- Let cool completely, then pop out of the pan.
- Heat-treat flour: microwave in 20-second intervals until it reaches 165°F (for safety).
- Beat softened butter, brown sugar, and granulated sugar.
- Mix in milk and vanilla.
- Add the cooled heat-treated flour.
- Fold in mini chocolate chips.
- Roll small scoops of dough and place them on top of each brownie bite. Press lightly to adhere.
- Melt chocolate chips with coconut oil until smooth.
- Spoon or dip the tops of each cookie dough bite into the melted chocolate.
- Immediately sprinkle with extra mini chocolate chips.
- Chill for 10–15 minutes to set.
