🥤 Thick & Creamy 4-Ingredient Pumpkin Smoothie

🛒 Ingredients
- 1/2 cup pumpkin pie filling
(sweetened & spiced — if using plain pumpkin purée, see notes below) - 1 frozen banana
(for natural sweetness and creaminess) - 3/4 cup unsweetened plant milk (almond, oat, soy, etc.)
- 1–2 tbsp nut or seed butter (peanut, almond, or sunflower for richness & healthy fats)
❄️ Optional Add-Ins (highly recommended):
- 1/2 tsp ground cinnamon or pumpkin pie spice (if you like it extra spiced!)
- 1–2 soft Medjool dates (if using unsweetened purée)
- 1 scoop vanilla vegan protein powder (for extra nutrition)
- Ice cubes (for a thicker, colder smoothie)
🍳 Instructions
- Add all ingredients to a blender.
Add liquids first for easier blending. - Blend on high until smooth and creamy (30–45 seconds).
Scrape down the sides if needed. - Adjust texture
Add more plant milk for a thinner smoothie, or ice for a thicker one. - Serve immediately in a glass or bowl. Top with granola, pumpkin seeds, or a dash of cinnamon if desired!
📝 Notes
- Using plain pumpkin purée instead?
No problem — just add:- 1 tbsp maple syrup or a pitted date
- 1/2 tsp pumpkin pie spice or cinnamon
to mimic the flavor of pumpkin pie filling.
- Banana substitute:
Use 1/2 cup frozen cauliflower or 1/2 avocado + 1–2 dates for a banana-free version.
