Vegan Blueberry Donuts recipe

🍩 Vegan Blueberry Donuts (Baked)

Ingredients:

Dry ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar (organic, to ensure it’s vegan)
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Wet ingredients:

  • 1/2 cup non-dairy milk (almond, soy, oat, etc.)
  • 1/4 cup unsweetened applesauce
  • 2 tbsp coconut oil or canola oil (melted)
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar (for a fluffy texture)

Add-ins:

  • 1/2 cup fresh or frozen blueberries (if using frozen, do not thaw)

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a donut pan.
  2. Mix dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, and salt.
  3. Whisk wet ingredients in a separate bowl: non-dairy milk, applesauce, melted oil, vanilla, and vinegar.
  4. Combine wet and dry ingredients. Stir gently until just combined — don’t overmix.
  5. Fold in blueberries carefully to avoid bleeding (especially if using frozen).
  6. Fill the donut pan about 3/4 full in each cavity. You can use a spoon or pipe the batter using a ziplock bag with the corner snipped off.
  7. Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before glazing.

🍇 Optional Blueberry Glaze:

Ingredients:

  • 1/2 cup powdered sugar
  • 1–2 tsp non-dairy milk
  • 1 tbsp blueberry juice or mashed blueberries (strained)

Instructions:

  1. Mix all glaze ingredients until smooth.
  2. Dip cooled donuts or drizzle on top.
  3. Let the glaze set for 15–20 minutes.
