Ingredients
4 chicken pieces (legs, thighs, or breasts)
1 cup all-purpose flour
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Vegetable oil for frying
2 cups chicken broth
1/4 cup milk
1 tablespoon cornstarch
2 cups cooked white rice
Grandma biscuits (store-bought or homemade)
Directions
1. Start by seasoning your chicken pieces with salt, pepper, garlic powder, onion powder, and paprika to give them a lovely depth of flavor.
2. Coat each chicken piece in the flour, shaking off any extra, so you get that perfect crispy coating.
3. In a large skillet, pour in enough vegetable oil to coat the bottom and heat over medium.
4. Once the oil is hot, carefully place in the chicken and fry until golden brown and fully cooked through. This usually takes about 6-8 minutes on each side. When done, set the chicken aside on a plate.
5. Don’t clean that skillet just yet! Pour in the chicken broth, using a wooden spoon to scrape up all those tasty browned bits from the bottom.
6. In a small bowl, mix the cornstarch with the milk, then whisk this mixture into the broth. Let it simmer, stirring, until the gravy thickens up nicely.
7. To serve, spoon a generous mound of white rice onto each plate, lay a piece of that crispy fried chicken on top, and smother it all in your homemade gravy. Don’t forget a couple of warm biscuits on the side to round out the meal.
