Cheeseburger Cups
Ingredients
- 1 pound ground beef
- 1 cup white onion diced
- 2 cloves garlic minced
- 5 tablespoons ketchup
- 2 tablespoons mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (16 ounce tube) jumbo biscuit dough 8 biscuits
- 48 cubes American cheese found in the deli
- 1 cup dill pickles chopped
- 1 1/2 cup lettuce shredded
- 1/2 cup onion diced
Instructions
- Preheat the oven to 375 degrees. Spray two muffin tins with nonstick cooking spray.
- Place the biscuits on a cutting board and cut each biscuit in half. Press out the biscuit dough and press each one into a muffin tin to form cups and set aside.
- Heat a large skillet on medium high heat and add the ground beef and onions and cook until browned. Add in the minced garlic and cook another 30 seconds just until fragrant.
- Add in the ketchup, mustard salt and pepper until combined, turn off the heat.
- Place one cheese cube into each biscuit cup and scoop about 2 tablespoons of the meat mixture into each cup, gently packing it in. Bake for 6-7 minutes.
- Remove the cheeseburger cups from the oven and press another cheese cube into each cup and place back into the oven and bake another 7-8 minutes or until golden brown.
- Remove from the oven and allow them to cool for 5 minutes then remove them from the tins.
- Serve and top them with dill pickles, diced onions and shredded lettuce.
