๐ถ๏ธ๐ฅ Spicy Grilled Chicken with Avocado Salad ๐ฅ๐ฅ
๐ For the Spicy Grilled Chicken:
Ingredients:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp chili powder
- ยฝ tsp ground cumin
- ยฝ tsp garlic powder
- ยฝ tsp onion powder
- ยผ tsp cayenne pepper (adjust to taste)
- Salt & black pepper to taste
- Juice of ยฝ lime
๐ฅ For the Avocado Salad:
Ingredients:
- 1 large ripe avocado, diced
- 1 cup cherry tomatoes, halved
- ยผ red onion, finely sliced
- ยฝ cucumber, diced
- ยผ cup fresh cilantro or parsley, chopped
- Juice of 1 lime
- 1 tbsp olive oil
- Salt & pepper to taste
๐ฅ Instructions:
1. Marinate the Chicken:
- In a bowl, mix olive oil, lime juice, and all the spices.
- Rub the mixture onto chicken breasts, coating well.
- Let marinate for at least 20 minutes (up to 4 hours for deeper flavor).
2. Grill the Chicken:
- Preheat a grill or grill pan over medium-high heat.
- Grill chicken for about 5โ6 minutes per side, or until internal temp reaches 165ยฐF (74ยฐC).
- Let rest 5 minutes, then slice.
3. Prepare the Avocado Salad:
- In a large bowl, combine avocado, cherry tomatoes, red onion, cucumber, and cilantro.
- Drizzle with lime juice and olive oil, season with salt & pepper, and gently toss.
4. Serve:
- Plate sliced grilled chicken over or beside the avocado salad.
- Garnish with extra lime wedges or a sprinkle of chili flakes if desired.
