๐Ÿ— For the Spicy Grilled Chicken:

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ยฝ tsp ground cumin
  • ยฝ tsp garlic powder
  • ยฝ tsp onion powder
  • ยผ tsp cayenne pepper (adjust to taste)
  • Salt & black pepper to taste
  • Juice of ยฝ lime

๐Ÿฅ‘ For the Avocado Salad:

Ingredients:

  • 1 large ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • ยผ red onion, finely sliced
  • ยฝ cucumber, diced
  • ยผ cup fresh cilantro or parsley, chopped
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Salt & pepper to taste

๐Ÿ”ฅ Instructions:

1. Marinate the Chicken:

  • In a bowl, mix olive oil, lime juice, and all the spices.
  • Rub the mixture onto chicken breasts, coating well.
  • Let marinate for at least 20 minutes (up to 4 hours for deeper flavor).

2. Grill the Chicken:

  • Preheat a grill or grill pan over medium-high heat.
  • Grill chicken for about 5โ€“6 minutes per side, or until internal temp reaches 165ยฐF (74ยฐC).
  • Let rest 5 minutes, then slice.

3. Prepare the Avocado Salad:

  • In a large bowl, combine avocado, cherry tomatoes, red onion, cucumber, and cilantro.
  • Drizzle with lime juice and olive oil, season with salt & pepper, and gently toss.

4. Serve:

  • Plate sliced grilled chicken over or beside the avocado salad.
  • Garnish with extra lime wedges or a sprinkle of chili flakes if desired.
