Ingredients:
- 1 lb (450g) boneless skinless chicken breast, cut into chunks
- 2 cups broccoli florets
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 2 tsp olive oil (or use cooking spray for 0 points)
- 1 tsp garlic powder
- 1 tsp Italian seasoning or dried oregano
- ½ tsp paprika
- Salt & pepper to taste
- Juice of ½ lemon (optional)
- Fresh parsley for garnish (optional)
🔥 Instructions:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- Prep the chicken and veggies:
Add chicken and all chopped veggies to a large bowl. - Season:
Drizzle with olive oil (or lightly spray), add garlic powder, Italian seasoning, paprika, salt, and pepper. Toss until everything is evenly coated. - Roast:
Spread everything evenly on the baking sheet.
Roast for 20–25 minutes, flipping halfway, until chicken is cooked through and veggies are tender and slightly golden. - Finish & serve:
Squeeze fresh lemon juice over top if desired and sprinkle with chopped parsley.
