Parmesan Baked Potatoes
Ingredients (with Quantity): Main Ingredients:
- 4 medium russet potatoes (or 1.5 lbs baby potatoes), halved
- 1/4 cup melted unsalted butter
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (optional for brushing)
Optional Ingredients:
- 1/2 tsp smoked paprika (for extra flavor)
- 1 tsp chopped fresh rosemary or thyme
- Sour cream or ranch (for dipping)
- Chopped parsley or chives (for garnish)
- Crushed red pepper flakes (for heat)
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
- In a small bowl, mix together Parmesan, garlic powder, onion powder, salt, and pepper.
- Pour melted butter into the baking dish and evenly sprinkle the Parmesan seasoning mixture over the butter.
- Place potatoes cut side down on top of the cheese layer. Press lightly to help them stick.
- Brush the tops with a little olive oil and sprinkle with herbs or paprika if using.
- Bake for 35–40 minutes, or until potatoes are tender and the cheese crust is golden and crisp.
- Let rest for 5 minutes before loosening with a spatula. Serve cut-side up or down, garnished with fresh herbs.
Tips for Success:
- Use freshly grated Parmesan, not the shelf-stable kind — it melts and browns better.
- Press potatoes firmly into the cheese so they crisp up evenly.
- Don’t overcrowd the pan to ensure crispy edges.
- Let cool slightly before removing to avoid sticking.
