Parmesan Baked Potatoes

Ingredients (with Quantity): Main Ingredients:

  • 4 medium russet potatoes (or 1.5 lbs baby potatoes), halved
  • 1/4 cup melted unsalted butter
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (optional for brushing)

 Optional Ingredients:

  • 1/2 tsp smoked paprika (for extra flavor)
  • 1 tsp chopped fresh rosemary or thyme
  • Sour cream or ranch (for dipping)
  • Chopped parsley or chives (for garnish)
  • Crushed red pepper flakes (for heat)

 Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
  2. In a small bowl, mix together Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Pour melted butter into the baking dish and evenly sprinkle the Parmesan seasoning mixture over the butter.
  4. Place potatoes cut side down on top of the cheese layer. Press lightly to help them stick.
  5. Brush the tops with a little olive oil and sprinkle with herbs or paprika if using.
  6. Bake for 35–40 minutes, or until potatoes are tender and the cheese crust is golden and crisp.
  7. Let rest for 5 minutes before loosening with a spatula. Serve cut-side up or down, garnished with fresh herbs.

 

Tips for Success:

  • Use freshly grated Parmesan, not the shelf-stable kind — it melts and browns better.
  • Press potatoes firmly into the cheese so they crisp up evenly.
  • Don’t overcrowd the pan to ensure crispy edges.
  • Let cool slightly before removing to avoid sticking.
