Keto Cheesy Focaccia in a Pan

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 egg
  • ½ cup almond flour
  • 1 tsp baking powder
  • 1 tsp garlic powder (optional)
  • ½ tsp Italian seasoning or oregano
  • 2 tbsp olive oil
  • ¼ cup shredded cheddar or parmesan (for topping)
  • Salt to taste

Instructions:

  1. Melt Cheese:
    In a microwave-safe bowl, melt mozzarella and cream cheese together (about 30–40 seconds). Mix until smooth.
  2. Make Dough:
    Add egg, almond flour, baking powder, garlic powder, Italian seasoning, and a pinch of salt. Mix into a sticky dough.
  3. Shape & Cook:
    Grease a non-stick pan with 1 tbsp olive oil. Press the dough into the pan to form a flatbread shape.
  4. Cook One Side:
    Cover and cook on low heat for 5–7 minutes until the bottom is golden.
  5. Flip & Top:
    Flip the focaccia carefully, drizzle a little more olive oil, and sprinkle cheddar/parmesan on top.
  6. Final Cook:
    Cover and cook the other side for another 5 minutes until golden and cheese is melted.
  7. Serve:
    Slice and enjoy warm with some keto-friendly marinara or garlic butter!
