Creamy Vegan Mushroom & Spinach Gnocchi 

When comfort food calls, nothing satisfies quite like a big bowl of  creamy  gnocchi — and this version is 100% vegan, bursting with flavor, and ready in under 30 minutes! 

This one-pan wonder features pillowy soft gnocchi swimming in a velvety garlic cream sauce, dotted with earthy mushrooms  and vibrant spinach . It’s rich, savory, and the kind of meal that wraps you in a hug with every bite. 


 Ingredients

  •  500g (about 1 lb) store-bought or homemade vegan gnocchi
  •  2 cups mushrooms, sliced (cremini, baby bella, or your favorite)
  •  3 garlic cloves, minced
  •  2 big handfuls of fresh spinach
  •  1 small onion, finely chopped
  •  Salt & pepper, to taste
  •  Pinch of red pepper flakes (optional)
  •  1 tbsp vegan butter or olive oil

 For the Creamy Sauce:

  •  1 cup canned full-fat coconut milk (or unsweetened plant-based cream)
  •  2 tbsp nutritional yeast
  •  1 tsp cornstarch mixed with 2 tbsp water (for thickening)
  •  1 tsp lemon juice (for brightness)

 Instructions

  1. Cook the gnocchi: Bring a pot of salted water to a boil, cook the gnocchi until they float (about 2–3 minutes), then drain and set aside. 
  2. Sauté the mushrooms & aromatics: In a large non-stick skillet, heat vegan butter or oil over medium heat. Add onions and garlic, sauté until fragrant. Add mushrooms and cook until browned and tender. 
  3. Add spinach: Toss in the spinach and cook until wilted. 
  4. Make the sauce: Pour in the coconut milk, nutritional yeast, lemon juice, and cornstarch slurry. Stir continuously until the sauce thickens and becomes creamy. 
  5. Combine & season: Add the cooked gnocchi to the sauce and toss gently to coat. Season with salt, pepper, and chili flakes to taste.
    Serve hot with a sprinkle of extra pepper or nutritional yeast on top. Enjoy immediately!
