Keto Cheesesteak Roll-Ups

Ingredients:
- 1 lb (450g) thinly sliced beef (ribeye, sirloin, or flank steak)
- 1 tablespoon olive oil
- 1/2 onion, thinly sliced
- 1 bell pepper, thinly sliced (optional)
- 4 oz cream cheese, softened
- 1 cup shredded provolone cheese (or cheese of choice)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the Beef:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the thinly sliced beef to the skillet and cook until browned, about 5-7 minutes. Season with salt, pepper, and garlic powder.
- Remove the beef from the skillet and set it aside.
- Sauté the Vegetables:
- In the same skillet, add the sliced onions (and bell peppers, if using). Sauté until softened, about 3-4 minutes.
- Make the Cream Cheese Mixture:
- In a small bowl, combine the softened cream cheese and shredded provolone cheese. Stir until smooth and well combined.
- Assemble the Roll-Ups:
- Lay the cooked beef slices on a flat surface.
- Spread a small amount of the cream cheese mixture onto each slice of beef.
- Add a few pieces of sautéed onions and peppers on top.
- Roll It Up:
- Carefully roll up each beef slice with the filling inside, securing it tightly.
- Serve:
- Arrange the roll-ups on a plate. Garnish with fresh parsley if desired.
- Serve immediately or store in the refrigerator for a make-ahead meal.
