Keto Mojito

Ingredients:

  • 10 fresh mint leaves
  • 2 tablespoons lime juice (freshly squeezed)
  • 1–2 teaspoons powdered erythritol (or monk fruit sweetener, adjust to taste)
  • 60 ml (2 oz) white rum (optional, skip for a mocktail)
  • 120 ml (4 oz) soda water (club soda or sparkling water)
  • Crushed ice
  • Lime wedges and extra mint for garnish

Instructions:

  1. In a glass, add the mint leaves, lime juice, and sweetener.
  2. Gently muddle (press) the mint with a muddler or the back of a spoon to release flavor. Don’t shred it!
  3. Fill the glass with crushed ice.
  4. Pour in the white rum (if using).
  5. Top with soda water and stir gently.
  6. Garnish with a lime wedge and extra mint leaves.
  7. Enjoy your refreshing, guilt-free Keto Mojito! 🥂
