Keto Mojito

Ingredients:
- 10 fresh mint leaves
- 2 tablespoons lime juice (freshly squeezed)
- 1–2 teaspoons powdered erythritol (or monk fruit sweetener, adjust to taste)
- 60 ml (2 oz) white rum (optional, skip for a mocktail)
- 120 ml (4 oz) soda water (club soda or sparkling water)
- Crushed ice
- Lime wedges and extra mint for garnish
Instructions:
- In a glass, add the mint leaves, lime juice, and sweetener.
- Gently muddle (press) the mint with a muddler or the back of a spoon to release flavor. Don’t shred it!
- Fill the glass with crushed ice.
- Pour in the white rum (if using).
- Top with soda water and stir gently.
- Garnish with a lime wedge and extra mint leaves.
