Keto Snickers Brownies

Ingredients:
For the Brownies:
- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/2 cup erythritol (or sweetener of choice)
- 1/4 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk (or coconut milk)
For the Caramel Layer:
- 1/4 cup unsweetened peanut butter (smooth or crunchy)
- 1/4 cup heavy cream
- 2 tbsp butter
- 1/4 cup erythritol (or preferred sweetener)
- 1 tsp vanilla extract
- Pinch of salt
For the Snickers Topping:
- 1/2 cup peanuts (roasted and salted)
- 1/4 cup sugar-free chocolate chips
Instructions:
- Prepare the Brownies:
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, whisk together eggs, melted butter, vanilla extract, and almond milk.
- Combine the wet and dry ingredients and mix until smooth.
- Pour the brownie batter into the prepared pan and spread it out evenly.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let the brownies cool completely.
- Make the Caramel Layer:
- In a small saucepan, melt together peanut butter, heavy cream, butter, erythritol, vanilla, and salt over medium heat.
- Stir until the mixture thickens and is smooth (about 5 minutes).
- Once thickened, remove from heat and allow it to cool slightly.
- Assemble the Snickers Brownies:
- Once the brownies are fully cooled, spread the caramel mixture over the top.
- Sprinkle roasted peanuts evenly over the caramel layer.
- Melt the sugar-free chocolate chips and drizzle over the peanuts.
- Chill & Serve:
- Refrigerate the brownies for at least 1 hour to allow the caramel to set and the chocolate to harden.
