Creamy Low-Carb Tuscan Shrimp

Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup spinach (fresh)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions:

  1. Cook the Shrimp:
    • Heat olive oil in a large skillet over medium heat.
    • Add the shrimp and cook for 2-3 minutes per side until they turn pink and are cooked through.
    • Remove the shrimp from the skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
    • Add the sun-dried tomatoes and cook for another 2-3 minutes.
    • Pour in the heavy cream and bring to a simmer. Stir occasionally.
    • Add the Parmesan cheese, dried basil, oregano, salt, and pepper. Stir to combine.
  3. Finish the Dish:
    • Add the spinach to the sauce and cook until wilted, about 1-2 minutes.
    • Return the shrimp to the skillet, tossing them in the creamy sauce until well coated.
    • Let everything simmer together for 2-3 minutes so the flavors meld.
  4. Serve:
    • Garnish with fresh parsley before serving.
    • Pair with a side of low-carb vegetables or cauliflower rice for a complete meal.
