Broccoli Cheese Salad

Ingredients:

  • 4 cups fresh broccoli florets (bite-sized)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon (optional but delicious!)
  • 1/2 cup chopped red onion
  • 1/2 cup sunflower seeds or chopped walnuts (optional)
  • 1/2 cup raisins or dried cranberries (optional for a little sweetness)

For the Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar (or regular vinegar)
  • 2 tablespoons sugar (or a sugar substitute if you prefer low-carb)

Instructions:

  1. Prep the broccoli: Wash and cut broccoli into small, bite-sized pieces.
  2. Mix the salad: In a big bowl, combine broccoli, shredded cheese, bacon, onion, and any nuts or raisins if using.
  3. Make the dressing: In a separate small bowl, whisk together mayonnaise, vinegar, and sugar until smooth.
  4. Combine: Pour the dressing over the broccoli mixture and toss well to coat everything evenly.
  5. Chill: Cover and refrigerate for at least 1 hour before serving — this makes it even tastier!

Tip:
If you like your broccoli a little softer, you can quickly blanch it (boil for 1 minute, then ice bath) before using. Otherwise, it stays crunchy!
