Keto Cauliflower Curry

Ingredients:

  • 2 tbsp olive oil or ghee
  • 1 medium onion, finely chopped
  • 3-4 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 small tomato, chopped
  • 1 medium cauliflower, cut into florets
  • 1/2 cup coconut cream or thick coconut milk
  • 1/2 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander for garnish

🍳 Instructions:

  1. Heat oil in a pan. Add chopped onions and sauté until golden brown.
  2. Add garlic and ginger, sauté for a minute till fragrant.
  3. Add chopped tomatoes and cook until soft and mushy.
  4. Add turmeric, cumin, coriander powder, chili powder, and salt. Cook for 1-2 mins.
  5. Add cauliflower florets and mix well with the masala.
  6. Cover and cook on low heat for 8–10 minutes or until cauliflower is tender.
  7. Add coconut cream, stir gently, and let simmer for 5 minutes.
  8. Finish with garam masala and chopped coriander.

Pair with keto naan, cauliflower rice, or enjoy it as-is in a bowl!
