Keto Cauliflower Curry

Ingredients:
- 2 tbsp olive oil or ghee
- 1 medium onion, finely chopped
- 3-4 garlic cloves, minced
- 1 inch ginger, grated
- 1 small tomato, chopped
- 1 medium cauliflower, cut into florets
- 1/2 cup coconut cream or thick coconut milk
- 1/2 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander for garnish
🍳 Instructions:
- Heat oil in a pan. Add chopped onions and sauté until golden brown.
- Add garlic and ginger, sauté for a minute till fragrant.
- Add chopped tomatoes and cook until soft and mushy.
- Add turmeric, cumin, coriander powder, chili powder, and salt. Cook for 1-2 mins.
- Add cauliflower florets and mix well with the masala.
- Cover and cook on low heat for 8–10 minutes or until cauliflower is tender.
- Add coconut cream, stir gently, and let simmer for 5 minutes.
- Finish with garam masala and chopped coriander.
