keto brownie cookies

Ingredients:
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- A pinch of salt
- 1/2 cup erythritol (or any keto sweetener)
- 1/4 cup melted butter or coconut oil
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips (optional but yum!)
Instructions:
- Preheat oven to 175°C (350°F). Line a baking tray with parchment paper.
- In a bowl, mix almond flour, cocoa powder, baking powder, salt, and sweetener.
- Add melted butter, egg, and vanilla. Mix until a dough forms.
- Fold in chocolate chips if using.
- Scoop small dough balls onto the tray and flatten slightly.
- Bake for 10–12 minutes. They’ll look soft—let them cool to set.
