keto brownie cookies

Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • A pinch of salt
  • 1/2 cup erythritol (or any keto sweetener)
  • 1/4 cup melted butter or coconut oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional but yum!)

Instructions:

  1. Preheat oven to 175°C (350°F). Line a baking tray with parchment paper.
  2. In a bowl, mix almond flour, cocoa powder, baking powder, salt, and sweetener.
  3. Add melted butter, egg, and vanilla. Mix until a dough forms.
  4. Fold in chocolate chips if using.
  5. Scoop small dough balls onto the tray and flatten slightly.
  6. Bake for 10–12 minutes. They’ll look soft—let them cool to set.
