Instructions:
- Prepare the dough:
- In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
- Add the eggs, melted butter, and mozzarella cheese. Mix until it forms a dough.
- If the dough is too sticky, add a little more almond flour until it’s easy to handle.
- Prepare the sausage filling:
- In a bowl, mix the ground sausage with garlic powder, onion powder, thyme (if using), salt, and pepper. You can adjust the seasoning to your taste.
- Form the sausage rolls:
- Preheat your oven to 375°F (190°C).
- Roll out the dough on a sheet of parchment paper into a rectangular shape (about 1/4 inch thick).
- Cut the dough into strips wide enough to wrap around the sausage filling.
- Place a line of sausage along the center of each strip of dough, then roll it up tightly, sealing the edges.
- Bake the sausage rolls:
- Place the rolls on a baking tray lined with parchment paper, making sure they’re spaced apart.
- Brush the tops of the rolls with a bit of melted butter or egg wash for a golden finish.
- Bake for 20-25 minutes or until golden brown and crispy on top.
- Serve:
